Swidden Rye (Svedjeråg in Swedish) is an old heritage variety that was popular among Finnish slash-and-burn farmers. The ears can grow to over two metres in length, and another name for swidden rye is midsummer rye. Swidden rye adds extra flavour to both bread and crispbread.
